Happy April!

March was really hard for me. For some time, I’d been experiencing joint pain, chest pain, and just not feeling well. After consulting cardiologists and my primary care doctor, they decided it is muscle pain. Now, to find out what the muscle pain is, but I did find out one thing, and that is that I cannot tolerate gluten. That’s a bummer.

I love bread, cakes, and pies! I’ve had my last Big Mac and Ruben Sandwich. Instead I am eating no bread, but there are pastas that are GF. I keep GF flour for gravy and thickening agents. 

How am I doing? Right now I have no gluten in my body. I try to be careful when I go out to eat, and I’ve done well with that. Potlucks at church are going to be hard on me, but I’ll probably bring what I can eat.

Did I tell you I make Sourdough Bread twice a week? I have found out that gluten enters my body through my skin. My husband does most of the mixing and kneading. I do wear gloves when I don’t have him around. There is always a bright side if you look for it.

The latest news is. I am legally blind now. I don’t have a driver’s license anymore, but an identification card. I’m able to do most everything I used to do, except read. I miss reading books. I am thankful for speaking books. Kindle books can read to you.

What am I doing right now? Writing! My goal is to finish the rough draft of Underground by the end of May. My plan is to publish it by the end of the year. I’m happy to be writing about President Maggie Culbertson again.

If anyone has any gluten-free recipes, I’d appreciate them. If you’ll leave a comment that you have one or more, I’ll send you my email address, and you can send me the recipe. I’ve tried bread with King Arthur Flour and I have not had a lot of luck with it, but I’ll keep on trying. I miss bread.

    I have a son-in-law with the same problem with gluten. I normally put 1/2 c. gluten free flour to 2 c. plain cornmeal mixed with a half tsp. of baking soda and enough buttermilk to make a smooth batter for my everyday cornbread. I preheat a cast iron skillet in a 400° oven with cooking oil to coat it. Cook till browned, usually about 20 to 25 min. He also likes my Mexican cornbread. Never use self-rising cornmeal mix. It has wheat flour in it. We don’t notice much difference from my usual recipe. Granny’s Mexican Cornbread uses the following ingredients mixed together and put in a rectangular cake pan that has been greased with shortening and coated with sifted gluten free flour. Cook in oven for 1 hr. Ingredients: 1.5 cups plain cornmeal, .5 c. gluten free flour, .5 tsp. baking soda,
    1 c. buttermilk, .5 c. cooking oil, 1 can whole kernel corn (drained), 1 can chopped pimiento (not drained), .5 c. chopped onion, .5 c. chopped bell pepper, .5 c. grated cheese (optional–I usually omit it.), 2 beaten eggs, 1 or 2 chopped jalapeño peppers. Mix and cook 1 hr.
    Another quick fix morning treat is Bisquick Blueberry Muffins. Use 2 c. gluten free Bisquick, 1/3 c.sugar, 2/3 c. milk, 2 Tbs. vegetable oil, 1 beaten egg, and 3/4 c. blueberries (fresh or frozen. The smaller the juicier). I use muffin tin liners, but you can grease muffin pan well. Combine all ingredients (except berries) and stir until just moistened. Fold in berries last. Divide evenly in 9 muffin cups. slightly and then remove from pan to cooling rack. These are real hits for my family. Even the rest of us enjoy them as much as those cooked with wheat flour.       Thanks, Patsy. I was thinking about cornbread the other day. I’m learning each day about new things to do, and so far I haven’t missed a meal. My grandson-in-law isGF, and my granddaughter has done wonders with his meals. I’ve learned a lot from her. I will pass this on to her. Theri second daughter is showing signs of GF.
      I can’t find GF Bisquick Mix so far in my grocery store. I may have to check out Walmart, but a friend told me she had send it there. I’ve gotten a GF Blueberry Muffin Mis that I like, and I use King Arthur Pancake GF mix. We like it. Thanks for the recipes, I know I’ll use them.
