When I found out I could not eat gluten, I began making or trying to make bread. I found Bob\’s Red Mill Flours, which are gluten-free. The bread I made was so grainy or gritty that I could not eat it. I even bought gluten-free bread, which is hard and tasteless. I had decided bread would not touch my lips, but I felt so cheated.

One of my favorite blogs about gluten-free living is one by Nicole Hunn, Gluten-free on a Shoestring, I love the look of the food she cooks. Last night I began reading more of her blogs, and I learned why my bread is so gritty. It\’s the flours I use. Last night, I realize I need to change my flours. Cheaper is not the best. Nicole talks about a flour mix she uses. She makes it herself with different kinds of flour and starches. You won\’t find these flours at Walmart or Kroger, but I hope to find them in a health food store. I want to make bread. I miss biscuits and buns. I miss rolls.

I\’m sharing this website and my disappointment of flours with you. Please look into it if you need to eat gluten-free. Remember all gluten-flours are not the same.
