\"\"Living without gluten is getting easier each day. I\’m amazed at how much better I feel. I\’m also amazed at how much easier it is not to eat gluten, especially when I cook.

Some things I\’ve learned.

  1. Use cornstarch to thicken sauces and gravy. There is no difference in the taste and texture.
  2. Get plenty of protein. Protein gives you energy. You need to eat 40-50 grams a day. Eggs are an excellent source of protein. Keep boiled eggs in the refrigerator. I cook mine in the Instant Pot.
  3. Take a probiotic or an enzyme tablet each day. I do a probiotic, but I have enzyme pills that I take when I feel I need them. This keeps the plumbing working.
  4. Exercise each day. My husband and I walk on warm days. I keep track of my steps with a smartwatch. I usually walk around 5,000-6,000 steps when we don\’t walk. When we walk, I\’m about 9,000.
  5. Get plenty of rest. Be sure to sleep 7-8 hours a night. You\’ll be amazed at how much better you\’ll feel with a good night\’s rest.
  6. Don\’t worry about what you can\’t eat. Think about the good things you can eat.
  7. Take one day a week and go meatless. I do this with Potato Soup. We love it, and we put extra cheese in it. Cheese is another way to get protein.
  8. Search the internet for gluten-free recipes. There is a good recipe for Protein Bites on the internet. I keep them in the refrigerator to snack on during the day.
  9. Read labels. I put a picture of gluten-free pancakes. There are several good mixes for pancakes that are gluten-free. Kroger has a good selection.
  10. Pasta can be found gluten-free. This has helped me a lot in my cooking.

I don\’t know everything there is to know about gluten, but I am learning. Our Thanksgiving will be mostly gluten-free, and those who think they can\’t live without gluten won\’t know it. If you have any questions, I\’ll be glad to answer them for you. Put them in the comments.

    1. Bread is the biggest culprit. It is loaded with gluten. There are flours that are gluten-free. I use Bob’s Red Mill. I’m trying to find a new one they have out that is “Extra Fine.” It is good for biscuits. Check cans and bottles you buy to make sure there is no wheat or soy in it. There are other grains that are not good for gluten-free, but I can’t remember what they are now. I keep rice, tapioca, almond, and coconut flour all the time. They are gluten-free. Fresh vegetables and fruit are gluten-free if you don’t add a sauce to them. I make sauces and gravy with cornstarch. It is gluten-free. I get a gluten-free loaf bread that is made by Ener-g. It is really good, but you have to toast or microwave it. One recipe I love is Protein Energy Bites. It’s on the internet, and has oatmeal, flax seeds, honey, peanut butter, and coconut in it. You can add chocolate chips, but they are a little hard when you put them in the refrigerator. You could add nuts also. Gluten-free people need protein. Protein gives you energy and you feel better when you have the right amount. I keep boiled eggs about all the time. I also eat a lot of peanut butter. Meats are also gluten-free unless you add sauces that have gluten. If I fry anything that needs to be dredged in flour, I use one of the gluten-free flours. Almond and coconut flours make food taste good. Most soups have gluten, especially Campbell’s. I make my own tomato soup, which I love tomato soup. A good snack bar is Larabars. The less ingredients, the most likely it is gluten-free. Larabars have 3 ingredients, and they are good.
