Congress passed President\’s Day in 1968. Before that, we celebrated President Lincoln\’s birthday on February 12,and President Washington\’s birthday on February 22. They combined the two holidays in order for us to have one national holiday, the third Monday of February. A time between Lincoln\’s birthday and Washington\’s birthday.
Congress decided we should have the one holiday on a Monday, and make a long weekend. Most banks are closed, the postal service, and federal offices.
Is cherry pie still served in honor of George Washington? Sure, if you want it. Abraham Lincoln was a very simple man. His favorite food was apples and corn cakes.
Both apples and corn were plentiful in the area Lincoln grew up. In fact, corn cakes are something we grew up eating. At least my husband did. I had never eaten them until we married, but I learned quickly how to prepare them. My children loved them, and I grew fond of them. Here is my recipe. I made them with leftover creamed corn, but you can buy canned cream corn, which works well.
Fried Corn Cakes
1 can creamed corn
1 egg
1 teaspoon sugar
flour to make the batter thick
Stir all ingredients, add more flour until the batter is thick like cake batter. Heat an iron skillet, add about 1 Tablespoon corn oil. Drop by spoonfuls into hot grease, turn after it browns on the bottom. Turn and brown on the other side. Drain on a paper towel.
You may have to add more oil if you have a large amount of batter. I usually put two tablespoons of batter to fry. Enjoy.
We do not put syrup on them. I serve corn cakes as a side dish.
