EIGHTY AND LOVING IT

\"\"A friend of mine suggested I might begin doing blogs and a Pinterest board about turning eighty. So here goes.

I turned eight in February. I will admit, I was a bit scared of the thought of being so close to death, but I finally got over it. I could have died at forty. Our end is not determined by our age.

Turning eighty gives you a few advantages.

  1. The senior benefits are great, but if restaurants can let seniors eat for less, why can\’t they let everyone? Don\’t get me wrong, I love a cheaper meal. I grayed early, so I\’ve been getting them for a while now.
  2. Most people are nicer to you. I\’ve never been escorted across the street by a Boy Scout, unless it was my son-in-law who works for the Boy Scouts.
  3. Airline personnel are much sweeter to you if you are older. They know we will not cause a lot of problems.
  4. You are allowed to make mistakes.
  5. If you can\’t hear well and talk out loud in church, no one thinks anything about it.
  6.  Most people will speak or nod to you.

These are some of the things I\’ve noticed during my few months of being eighty. I still cook, and I\’d like to share one of my favorite easy recipes. Easy is the key word.

Sweet and Sour Chicken

3-4 chicken breasts or 6 thighs (I use chicken tenders)

1/2 cup orange marmalade

1/3 cup Russian or Catalina dressing

Spray a baking dish with Pam, lay chicken in the bottom in a single layer. Mix up the marmalade and dressing. Spread over the chicken, place in an oven preheated to 350 degrees. Cook for 40 -45 minutes. During the cooking, spoon the dressing mix over the chicken. Enjoy with rice or other vegetables on the side.

      This is one of my favorites. I make it in small or large sizes, and it is a never fail recipe. A friend of mine uses apricot jam, but it is hard to find sometimes. It is good with it. We like the orange marmalade.
