Bread is the hardest thing for me to get used to not eating. I have always loved bread, but gluten-free bread is not the best in the world. One of my favorite breads is cornbread. I\’m Southern! Most Southerners love cornbread.
My favorite gluten-free cornbread is a mix I get at Aldi\’s. They consider cornbread to be a seasonal dish. They only stock it in the fall and winter. I eat it all year around. What else do you eat with white beans or green beans? I was raised on cornbread all year long. It was not considered a seasonal bread in East Tennessee.
After thinking several days about my delima, I decided to try regular cornbread meal, not a mix. A mix has flour in it, but the regular cornbread meal does not. The gluten-free cornbread is not very good, but I\’m finding better recipes all the time.
I looked at the ingredients on the side of the package, and it had no flour in it. Then I looked at the recipe on the back. I have some King Arthur Gluten-free Flour. I will use it instead of the flour listed in the recipe. I\’ll have to work with it to get it just right, but I will.
If you are gluten-free, you can use some of your other recipes without using regular flour. I\’ve made several of our favorite dishes. You get to play with your food when you change the recipes to make them gluten-free. That is the only time playing with food is acceptable.
Eating gluten-free has been a journey for me, but I am finally getting used to it. We\’ll see what will happen on vacation this summer. It should be interesting, but I do not want to eat any gluten. It will be one miserable vacation if I do.
