My life is a lot better now. I found gluten-free Oreos. They are delicious! Someone had told me about them, and I finally found them in Kroger. It is hard to find gluten-free food in Kroger. I wish all the GF food was together. It would be much easier than hunting through the store for what I want.
My friend, Regina Merrick, made a gluten-free snack mix for me Saturday, and it is delicious. She found it on Pintrest. It was so sweet of her to think of me for this snack. I really appreciate it.
Chex cereals are gluten-free except wheat chexs. Naturally with wheat as the main ingredient it is not GF. I use Cheerios because they are GF, and I\’ve always loved them.
If your recipes call for flour as a thickener, remember two tablespoons of flour is equal to one tablespoon cornstarch and cornstarch is GF.
I\’m still having a problem with cornbread, but I realized today how I could solve it. I\’ll work on it for the next couple of weeks and let you know how it comes out. I love cornbread, and Aldi\’s has a wonderful gluten-free mix except it is seasonal. This is not the right season. I grew up with cornbread all summer, but apparently Aldi\’s didn\’t. I will stock up this fall.
This has been a much better week for me with gluten-free living. I feel much better eating GF. Anything is better with Oreos.
