Last week I had a hard time not eating bread. Now, I have biscuits in the freezer and a great hamburger bun/roll recipe. It is so good to have friends.
Eating gluten has really hurt my body and my mind. I had gotten depressed because I couldn\’t make a biscuit that wasn\’t hard as a brick. My biscuits could be used as self-defence. If anyone attacked me, I could throw one and knock a person out. They were that hard. I knew I had to do something. I needed flour that could make biscuits.
Since I can\’t see to drive anymore, I am at the mercy of my husband. He is a wonderful, understanding person and he drove me to Paducah last week. We found a great health food store called The Golden Carrot. The employee was so nice. She helped me find the right flour, King Arthur Gluten-free Flour. I made biscuits! I made biscuits that taste like biscuits. They were not gritty, but good. I used the biscuit recipe from www.glutenfreeonashoestring.com. They were very good. I did use the King Arthur and not the Better Batter she recommends. It worked!
My friend in Scotland, Gina Cameron, send a recipe for a hamburger bun/roll to me. I had to make it, and it was delicious. It makes two hamburger buns, which is all I need for the two of us, and my husband even liked it. I\’m sharing, and I hope Gina doesn\’t mind. This is a Keto recipe, but it is gluten-free. Hamburger Rolls
1 cup grated Mozzarella cheese (I used the grated from Kroger)
2 tablespoons cream cheese
1 egg
3/4 cup almond flour
1/2 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon Italian seasons only in hamburger buns
Place cheeses in a microwaveable bowl and melt together, about 30 seconds. Stir and add more time if needed. Add other ingredients and mix well. Divide into either two hamburger buns or rolls. You can wet your hands to shape it into buns. Place on baking pan lined with parchment paper. Bake at 400 degrees for about 20 minutes. or until golden brown.
It is delicious.
