The new year has started with good gluten-free recipes. If you are gluten-free, and like your food to taste like it did before you had to eat gluten-free, I can understand your pain. This has been most of my problem. I love comfort food, biscuits, rolls, pancakes, cookies, cakes, etc. Everything made with flour.
There are several so-so breads out there that are gluten-free, but I still miss the real taste of real bread. I did cheat with donuts, but that didn\’t work. I was sicker than ever, and I still craved donuts. I have seen the light. I have found a website that has food that tastes almost as good as the real thing.
My family has always liked oatmeal cookies, the kind you make from the lid of the oatmeal box. They are so good. I missed the taste of a good, sweet oatmeal cookie. I can eat sugar and dairy, it\’s just the gluten that my belly won\’t handle. Nicole Hunn has the best recipes, and they are easy, and you don\’t have to buy a lot of other stuff. You do have to build up your supply of flours, but do it as you need it. I\’ve copied off so many of her recipes, and I\’ve tried her Oatmeal Cookies. I put raisins in mine, but the recipe calls for chocolate chips. We always had raisins in our oatmeal cookies when my kids were small.
The best part yet, my husband loves these oatmeal cookies. They are easy. I made them Thursday night, and they are still soft. Not hard as bricks like some gluten-free things I\’ve made. I\’m anxious to do the Sourdough and the Sandwich Bread. I need different flours, but I will get them when we go grocery shopping. My Kroger has a good supply of gluten-free flours.
