This will be the hardest time for me and my gluten-free life. The holiday goodies are everywhere! I have always enjoyed the cookies and cakes I have baked around Christmas. My family loves the German Coffee Cakes I\’ve made for years. They are not gluten-free. I need to find a health food store that sells more varieties of flour than Kroger or Walmart does. The Walmart in our town is pathetic with gluten-free. They have very little, and they constantly move their display. I hate to have to search to find what I need.
I search daily for recipes I can use that both my husband and I can eat. He is not gluten-free. It is a challenge, but so far, I\’ve found some easy and good dishes. When you put them in the refrigerator, they get very hard. These are good, and we usually have them on hand to grab when we need a snack. They are so much better for you than cookies.
Last week I did have a little set-back. I ate pizza, which I love. I did not get the gluten-free kind because my husband also loves the regular. I will get the gluten-free next time. I did not have a good week.
