WHY GLUTEN-FREE?

\"\"Last week, I announced on Facebook that  I am now gluten-free. What a change in my life!

Several friends have asked me why I decided to go gluten-free since I do not have celiac disease. Let me give you my best answer.

  1. I was having terrible headaches, and I started this journey in January. When I went off gluten, my headaches stopped. When I age gluten, I\’d have a headache.
  2. I had tummy issues with lots of bloating, constipation, and diarrhea.
  3. I had brain fog. Thinking became a big issue for me.
  4. I was tired all the time. I didn\’t have enough energy to do anything. I\’ve always been a pretty active person, but lately, I didn\’t have the energy to tie my shoes.

Since January, I\’d been on and off gluten. I knew I could eat vegetables and fruit, but I am a bread eater. I love bread. That was my biggest problem. I had to get bread out of my diet. When I no longer ate gluten, I went on a gluten withdrawal. This has lasted a little over two weeks. From the YouTubes I watch, that is about right. One doctor said it took between four to six weeks to detox. I believe that.

How am I doing today? Wonderful! This is the best day I\’ve had so far. I had been getting up with little energy. I feel I am about over the withdrawal. Gluten is addictive. The videos I watched said it\’s like a drug addiction, and I believe them. When you get the gluten out of your system, you will feel better. I did this cold turkey.

If you are interested in going gluten-free, I will be talking more about it. There are a lot of people who are gluten-free, and most of them will give you advice. I do know I feel like a different person. If you want more information about what I\’m doing, leave a comment. I have found a decent bread, Ener-g. They have a website www.ener-g.com. I can\’t find it in my area, but I did order it from them. Also, we like Bob\’s Red Mill flours. I have found them in Kroger and Walmart. Even my husband likes their pancake mix. As I go along my journey, I will let everyone know on Wednesday what I\’m doing. I also plan to do some Facebook live videos. I want to help others.

      Medically, you could have a low thyroid. I do, and I take thyroid medicine. Each time they check my thyroid, it’s fine with the meds. That made me think about gluten. Go off bread first, and see if it helps. Fresh fruits and veggies have no wheat or soy in them, so they’re good. Look at the labels. If they have wheat of any kind, they have gluten. If they have soy of any kind, they have gluten. I’ve eliminated these from my diet. I will give a few recipes on the next segment, stay tuned. I love the way I feel today. Plenty of energy.

  1. I’ve always had a problem with stress-eating, and most of the comfort food I can think of has gluten, so I’m not surprised! I need to get back on my diet. I felt so much better, but when the wedding was over and Dad had the stroke, the comfort-eating commenced! Looking forward to following your journey!! đŸ™‚

      I thought I’d answered this. Yes, comfort food is full of gluten. Gluten lines our small intestines like plaque lines our arteries. It takes 4-6 weeks to completely detox. I’m almost there, and I feel so much better. Getting my mind to accept this is the hardest thing. There are more recipes out there now. I’m anxious to start trying more of them. When this wedding is over, I’m sure I’ll not be so stressed. I have more energy than I’ve had in a long time, and my mind is clearer. Gluten causes brain fog.
